Cajun Jambalaya with Shrimp - Servings: 4 - Cook Time: 20 Min

Ingredients

1. 1/2 pound boneless, skinless chicken breast, cut into bite-size pieces 2. 1/2 pound uncooked large shrimp 3. 3 tablespoons vegetable oil, divided 4. 2 medium red and/or green bell peppers, sliced 5. 4 ounces andouille sausage or kielbasa, chopped 6. 2 cups water 7. 1 (5.6 ounce) package Spanish Rice 8. 1 clove garlic, chopped

Directions:

1. Season chicken and shrimp, if desired, with salt and ground black pepper. Heat 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat and cook chicken, stirring occasionally, 4 minutes or until chicken is thoroughly cooked. Remove chicken and set aside. 2. Heat 1 tablespoon oil in same skillet and cook shrimp, stirring occasionally, 2 minutes or until shrimp turn pink. Remove shrimp and set aside. 3. Heat remaining 1 tablespoon oil in same skillet over medium heat and cook red peppers and sausage, stirring occasionally, 4 minutes or until sausage is browned and peppers are crisp-tender. Stir in garlic and cook 1 minute. Add water and Spanish Rice. Bring to a boil over high heat. Reduce heat to medium and cook covered, stirring occasionally, 7 minutes or until rice is tender. Stir in chicken and shrimp.

Slow Cook Jambalaya- Servings: 12- Cook Time: 8 Hrs

Ingredients:

1. 1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes 2. 1 pound andouille sausage, sliced 3. 1 (28 ounce) can diced tomatoes with juice 4. 1 large onion, chopped 5. 1 large green bell pepper, chopped 6. 1 cup chopped celery 7. 1 cup chicken broth 8. 2 teaspoons dried oregano 9. 2 teaspoons dried parsley 10. 2 teaspoons Cajun seasoning 11. 1 teaspoon cayenne pepper 12. 1/2 teaspoon dried thyme 13. 1 pound frozen cooked shrimp without tails

Directions:

1. In a slow cooker, mix the chicken, sausage, tomatoes with juice, onion, green bell pepper, celery, and broth. Season with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme. 2. Cover, and cook 7 to 8 hours on Low, or 3 to 4 hours on High. Stir in the shrimp during the last 30 minutes of cook time.

Spicy Jambalaya- Servings: 6 - Cook Time: 45 min

Ingredients:

1. 2 tablespoons peanut oil, divided 2. 1 tablespoon Cajun seasoning 3. 10 ounces andouille sausage, sliced into rounds 4. 1 pound boneless skinless chicken breast, cut into 1 inch pieces 5. 1 onion, diced 6. 1 small green bell pepper, diced 7. 2 stalks celery, diced 8. 3 cloves garlic, minced 9. 1 (16 ounce) can crushed Italian tomatoes 10. 1/2 teaspoon red pepper flakes 11. 1/2 teaspoon ground black pepper 12. 1 teaspoon salt 13. 1/2 teaspoon hot pepper sauce 14. 2 teaspoons Worcestershire sauce 15. 1 teaspoon file powder 16. 1 1/4 cups uncooked white rice 17. 2 1/2 cups chicken broth

Directions 1. Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Sauté sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and sauté chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside. 2. In the same pot, sauté onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally. 3. Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

Chicken And Sausage Jambalaya – Great for Big Groups!

Ingredients:

1. 5 lbs. of chicken pieces with skin and bones 2. 2 lbs. of your favorite sausage (andouille, smoked, etc.) cut into small round slices 3. 5 tablespoons of vegetable oil 4. 3-4 chopped up white onions 5. 2 stalks of celery chopped 6. 1 green and 1 red bell pepper chopped 7. 2 cloves of garlic chopped 8. 2 cups of chicken broth 9. 1 1/2 cups of water 10. 1 can of whole tomatoes chopped up 11. 2 teaspoons of Cajun seasoning 12. 2 1/2 cups of white rice

Directions:

1. Heat a skillet with the oil. Add the chicken pieces and brown them for 5 minutes of so. Remove the chicken and set it to the side. 2. Add the sausage pieces to the skillet and brown them for 5 minutes or so. Remove the sausages and set them to the side. 3. Add the onions, celery, and bell peppers to the skillet and cook them on medium heat for about 10 minutes. You want the onions to be golden brown. 4. Add the garlic and 1 cup of the chicken broth to these 3 vegetables. Cook together for about 4 minutes. 5. Transfer all of the ingredients to a large pot. Raise the temperature until the liquid begins to boil. 6. Reduce the heat to medium and cover for approximately 30 minutes. 7. The jambalaya will be ready when most of the liquid is gone, and the rice is very soft. 8. Add a bit of Cajun seasonings to taste.
